Lorenzo Tron

Lorenzo Tron is the founder of the award winning restaurant Shop225, which has been awarded Australia’s best pizza. Opening its doors in Melbourne in 2016, Shop225 started with a simple yet ambitious vision: create a restaurant where everyone could share a meal together, regardless of allergies, intolerances, or dietary choices.

Born and raised in Friuli Venezia Giulia, Lorenzo moved to Australia only to learn English, never imagining that his journey would lead him into the world of pizza, hospitality, and what has become his life’s purpose: culinary inclusion.

After years spent working across restaurants, bars, and Italian product importation, Lorenzo felt the need to build something that truly represented who he was. That idea became Shop225 – a small neighbourhood pizzeria with a big mission. Over the years, Lorenzo and his team introduced vegan pizzas, house-made pasta, gnocchi, gluten-free and dairy-free desserts, all built around the same principle: Food is for everyone. Food unifies. 

A testament to his commitment and vision, Shop225 became the first pizzeria in Australia officially accredited by Coeliac Australia. Committed to safe, gluten-free dining with dedicated spaces, Shop225 relies on carefully sourced flours and techniques that respect the people who rely on them, to ensure the restaurant remains at the forefront of inclusive dining. 

The work of the Shop225 team has been recognised both nationally and internationally, including:

  • Best Pizza in Australia – 50 Top Pizza
  • 28th Best Pizza in the World – 50 Top Pizza World
  • Top 5 in Asia-Pacific – 50 Top Pizza
  • 2 Stars awarded by Guida Chef di Pizza Stellato
  • Recognised as “Ambassador of Good Pizza in the World”
  • Multiple awards for inclusivity, dough quality, and innovation for vegan, vegetarian, and coeliac diners
  • Featured in industry guides, national media, and institutional discussions on food safety and hospitality standards

Alongside Shop225, Lorenzo and his business partner opened Il Caminetto, built with the same foundation: technique, fermentation, time, respect for ingredients and the rich culture behind pizza. Il Caminetto has also received international recognition, ranking in the 50 Top Pizza Asia-Pacific in 2023, 2024, and 2025.

Today, Lorenzo works with the same humility and determination as the day that Shop225 first opened. Considering himself above all, a craftsman, who loves dough, fermentation, the pursuit of ingredients — and the cultural story that every pizza carries. He believe in hospitality that welcomes and protects people, allowing everyone to sit at the same table without fear.

In 2025, the work of both Shop225 and Il Caminetto was recognised further with a nomination for Best Customer Service in the Asia-Pacific region — a reflection of the attention, respect, and warmth that the venues offer every guest who walks through the doors.

This journey—born almost by chance—has become Lorenzo’s life. Every award, every recognition, and every satisfied guest reminds him of why he does what he does: Pizza is tradition. Pizza is culture. Pizza is home. And it becomes even more powerful when it can be shared by everyone.
